Il Fornaio (eel-for-nigh-oh) means “the baker” in Italian. They began as a baking school outside of Milan in 1972, created in response to the disappearing art of centuries-old Italian baking. Gathering traditional recipes from the diverse regions of Italy, Il Fornaio taught a new generation the secrets of traditional bread making. Today there are thousands of Il Fornaio bakeries throughout Italy. In 1981, Il Fornaio came to the United States, first as retail bakeries in San Francisco and Beverly Hills. Their first full-service Il Fornaio Cucina Italiana restaurant opened in Corte Madera in 1987 after the company was acquired by noted restauranteur Larry Mindel. 

At Il Fornaio, the mission is to provide guests with the most authentic Italian experience outside of Italy. Using the freshest ingredients & traditional cooking techniques, each Il Fornaio offers a wide variety of premium-quality Italian food paired with an award-winning wine list & crafted cocktails in beautiful settings located in California & Las Vegas. All 18 kitchens are supervised & guided by Sicilian native Executive Chef Roberto Gerbino using multi-generational family recipes & preparations that Italians have mastered over centuries of making great cuisine.
